Baked Vegan Donuts

When you desire that sweet comforting donut, but don’t want to grab the ones from the store because they’d probably cooked in LARD (or not vegan), now these donuts will satisfy that craving! These are super delicious, you wouldn’t even think they’re not deep fried.  Kids absolutely love them!

Dry Ingredients:

2 Cups unbleached white flour

3 tsp Baking Powder

½ tsp fine Celtic Salt

1/8 tsp nutmeg (you can increase this to ¼ tsp if you want it to come through a little more)

1/8 tsp Cinnamon (you can increase this to ¼ tsp if you want it to come through a little more)

Wet Ingredients:

1 + ¼ Cup Soy Milk

1 tsp Apple Cider Vinegar or Lemon Juice

1 tsp Vanilla

½ Cup vegan butter (I use Nuttelex, Alternatively you can replace with Coconut cream, it won’t be as fluffy but still delicious)

2/3 Cups Raw Sugar

 

Glaze Ingredients:

2 Cups powdered sugar

4 tbsp water

1 drop of your favourite food extract (vanilla, strawberry, etc)

 

Method:

  1. If you have a donut maker, get it ready. But if you do not, preheat oven to 177 degrees C.

  2. In a large bowl, mix all dry ingredients

  3. In a small saucepan, add all wet ingredients on low-med heat, and stir to melt butter and dissolve the sugar. Make sure the mixture is warm and not hot.

  4. Add wet ingredients to the dry ingredients. Mix well but make sure not to overmix. It will resemble a thick cake batter.

  5. If you are using a mini donut maker, plug on the power and wait for the light to turn green (meaning it’s ready), then scope 1 tablespoon of batter into each donut cavity, no need to smooth the tops. Once done, close the lid and wait for the light to turn green again. Once green, open the lid and check to see if the donuts are slightly golden brown, then transfer to cooling rack and let cool completely before frosting or decorating.  Repeat for the rest of the batter.

  6. If you are using the oven, in a mini non-stick donut pan (ungreased), add a tablespoon to each donut cavity, smooth the tops. Make sure the donut batter sits just below the rim of the donut cavities, as they will rise when baking.

  7. Bake for 10-12mins or until slightly golden and brown.  Take out and let cool completely before decorating.  Repeat with the rest of the batter.

  8. To make the Glaze: mix all ingredients into a bowl until very smooth. If you want to make two different flavours, divide the glaze mixture into two separate bowls.

  9. In each of the glaze bowl, add 1 drop of your desired food flavour extract. Mix well.

  10. When donuts have completely cooled, dip one side into the glaze, left out and let some drip off, then transfer to the cooling rack or plat to let the glaze completely harden. If you have a ceiling fan or any other fan, it can be used to dry up the glaze faster.
