Vegan Potato Salad Mayo

This mayo is so creamy and delish...

Perfect consistency as a dressing...

Tastes way better than the real thing!

 

 

Ingredients:

2 Cups Raw Cashews (preferably soaked 1-4 hours)

1 Large Lemon (more if prefer tangier)

½ tsp Celtic Salt

2 tsp Apple Cider Vinegar (optional, if omitted add more lemon)

1 tsp Ground Mustard

½ cup water

½ cup Soy Milk

1 clove Garlic

1.5 Tbsp Honey or Maple Syrup

2 Tbsp Oil (optional)

 

Method:

  1. Add all ingredients into a blender and blend until super smooth.

  2. Taste and adjust if needed.
