Easy Tasty Green Salad

This salad will convert any raw salad haters…

 

 

Salad Ingredients:

2 handfuls of washed baby spinach

2 handfuls of washed salad mix

5-6 baby cos lettuce leaves

½ red onion thinly sliced

1 large Carrot julienned

1/2 red capsicum sliced

1-2 red tomatoes

1/3 cup of cooked chickpeas or red kidney beans (optional)

1 Handful of sprouts (optional)

1 Avocado diced (optional)

 

Dressing Ingredients:

4-5 Tbsp of full fat coconut cream

¼ - ½ a Lemon Juice

1-2 tsp maple syrup

½ - 1 tbsp vegan chicken seasoning

 

 

Method:

  1. Place all prepared salad into a large mixing bowl.
  2. Add all dressing ingredients into the salad mixing bowl and mix thoroughly together.
  3. Taste and adjust according to taste.

 

 

Note: The salads in these pictures were an express version of this recipe, so it does not have all the vegetables as listed.  I have included two different salads here but very similary using the same dressing.  Normally I would throw together what ever vegetables I have on hand, top it up with this quick dressing and there you have it, a gorgeous, healthy salad ready to devour.
